Probably this is the name of the vpopmail user in /etc/passwd. The ampersand is replaced by the account name in utilities that display the Fullname field. You can set FULLNAME in your config file to whatever text you want and that will be override the default FULLNAME setting. You can look at the confirm_request.txt file in the templates directory to see how FULLNAME comes into play.
