I use the following setup for our agency: we only have 120 users but they each receive around 60 to 100 legit emails per day from clients. this does not account for the spam that gets either tagged or dropped completely. Our load may not be as high as yours but it will at least give you a starting point.
OS: Linux Linux From Scratch v5.1 - personal build ARCH: ix86 MOTHER BOARD: Gigabyte GA-7DPXDW-P Dual CPUs Socket A MB CPU: 2 x AMD Athlon MP +2400 RAM: 4 gig SUB SYSTEM: Adaptec Ultra320 Dual Channel SCSI Card DRIVES: 2 x Seagate 36gig 15krpm EMAIL SERVER: qmail SERVER ADD ON: spamassassin, clamav, qmailscanner, tmda, ldap, squirelmail w/ this setup our server runs at about 45 to 60% on avarage. granted, we are running a little more that just SA and TMDA. I would take a look at MSI's K8D Master board. it can take either dual 32 or 64 bit AMD chips. would also invest in as much ram as you can.
