Colloquay[1] is a nice Mac OS X IRC client, but I prefer to use a  
combination of screen and irssi[2] from my remote server for IRC,  
since it allows me to stay logged in all the time and just detach  
from the screen session when I am away.  Upon returning I can view  
all conversations while I was away.
