If you check the windows NT registry where you hv installed Tomcat, under the "HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Services\Apache Tomcat" key, what is displayed in the Control-Panel/services is nothing but the value of the "DisplayName" key (which is 'Apache Tomcat').
