If you only want to deploy a specific app in a directory other than the 
TOMCAT_HOME/webapps directory, you can do so by adding another context
entry 
to your server.xml file.
Example:        
        <!--
          <Context path="" docBase="ROOT" debug="0">
        -->
          <Context path="/myApp" docBase="/home/me/myApp" debug="0" />

If you wish to do more than that (such as autodeploy from that dir...
etc..) 
follow Yoav's directions for setting up another host.

If you've tried this, and it didn't work, please post the entry that you
made 
into your server.xml file and any error messages from your console or
logs so 
that we can better help you.
