Write a standalone application that will go through the customer records, extract the information using the old classes, then repackage them in the new classes and reserialize them?Does anyone know a way around the serialization problem? If there's an easy solution, I would jump on moving all of our classes into a package immediately -- something we've been wanting to do for a few years.

That should work, then you can just move to the new, better, structure.
