Apparently I'm one of the few on the west coast - sorry for the delay this morning.
I added the PrintGCDetails line to my CATALINA_OPTS and got a bit more information - although I'm afraid I'm not sure if this is the information Chuck was looking for?
My catalina.out file showed the following lines just before tomcat tipped over at 17 sites:

I will try increasing the Xms parameter now, although I believe we did try that earlier in the debugging process.

It would be even better to get some real data with the -XX:+PrintGCDetails, so we can stop speculating...
