If you do: 
java  -X
    you will see all extended options. Xms and Xmx are for heap.
The only way that I know how to set stack size is in JVM Assembler.
It is normally done in the method:

.method
    .limit stack 3
    .limit locals 4

After all each thread must have it's own stack.  So I really don't know
what the global possibilities are available
