I think you highlight the very critical point; electrical connectivity along panels is likely to change along time and could randomly impact the pattern/SWR of nearby antennas. I think I will opt for a neutral (no aluminium) roof: I'll miss a good ground for a roof mounted vertical but I will avoid headaches because of panels bonding.
