Peter; Yes, if you switch Labels Display Mode to view labels instead of names in Composer, the most specific subproperty of rdfs:label will be displayed. Since skos:prefLabel is a subproperty of rdfs:label, it will take precedence over rdfs:label.
To switch to the label view mode, click the icon in the top row for "Toggle between qnames (with prefixes) and human readable labels" - it looks like a person. This is described in the "Labels Display Mode" section of Help > User Interface Overview.
