1) The .desktop file is in my /home/jack/Desktop folder but does not show up on 
my visible desktop.
2) I also have ticked/checked 'show trash can' and 'show connected volumes' and 
'show Documents folder' from Desktop Preferences -> Desktop Icons, but none of 
those appear visible on my desktop either.

I have tested creating a desktop shortcut and did it successfully on my VM.
This was after installing to disk from a previous OBI and upgrading.
It persisted on logout/login

Hmmm... not sure.  If you tested it in VBox this is something that has
happened before.  In my KVM machine it sees my wireless as a wired
connection.
If it is on real hardware, then this could be a bug
