How about POSSE France? There is a community of teachers sensitized about open
source but missing some incentives and knowledge about the methodology of
putting such a class in place (getting in touch with community, how to find
projects with high pedagogical value, the day-to-day work about a class on
FOSS, etc.)

I'm sure Roberto Di Cosmo -- director of IRILL (Institute for Resesarch and
Innovation on Free Software, CCed), will be glad to host such an event.
However it will be nice to have some of your experience and expertise that you
have developped since the early days of POSSE.

Please let me know if you think that such a thing is doable. I will be glad to
give it a try.

Best,
