Your Bach problem is almost certainly (99%) caused by a rogue artistsort tag on another file somewhere in your collection that has a value of "Bach, Johann Sebastian" in it. It only takes one such tag to change the order of all your Bach albums.
Do you have something like MP3Tag that you can load you entire directory into and scan down the tags - usually you can find the errant tag that way. This isn't a Touch issue, it's an SBS issue - and it's not a bug... Your other problem is more difficult, you can turn off the composer entries appearing via the web UI setting for compilations but I don't think you'll want that.
