I've always used the default setting (5, actually) for 16/44.1. I don't think I've seen any reports that it's been any kind of problem for the Touch. If you're transcoding to move your library into a new lossless audio format, I think it would be wise to not change either the sample size or bitrate. FLAC certainly seems much less problematic for Squeezebox than ALAC.
