On the Touch, go to :
Settings -> Advanced -> Remote Login -> Enable SSH

Note the address (for example 192.168...) and password (by default
1234) given by the Touch.

If you have a Mac, open a Terminal window and type the following
command :
ssh -l root <the_address_given_by_the_touch>
Then you will be prompted for the password.
And now you have remote access to the Touch.

On a PC, I don't know how to do it (I've read that you can use a
program called putty...).

Anyway, on the Mac, here is what I do next :
cd /etc/squeezecenter/prefs/

The I use the vi program to edit the server.prefs file :
vi server.prefs

You then have to locate the composerInArtists line and, in your case,
replace the 1 by a 0 and save your modification.

On the Touch you will have to wipe out your old database scan and do a
full rescan of your music files, so that the composers are no more
listed in the Artist menu.

What I don't understand is why you have this User Preference with a
value different from the default value...
