Look, you don't realy need to embed images back to your mp3's. Just put cover.jpg in each album folder, then using mp3tag editor delete all embedded images from your library. I've never use mp3tag but sure it can do that job for you. I did about the same. My cover.jpg's were 1500x1500 so I manualy resized them and it took not more than a few days. I've got aprox 700GB of musuic, never counted the number of albums though, but think that quite a lot.
