You have a good plan. There is no reason not to expect that your second touch shouldn't work well streaming FLAC. Assuming that you don't have interference issues with WiFi, wireless should work. The only potential issue is that the microwave can destroy your wireless signal when it is running. For this reason, I went to using a powerline ethernet adapter solution for the kitchen. Before havning more CAT-5 run, you might want to do a price comparison. Powerline adapters aren't cheap ($100+ for a pair typically), but it is most likely cheaper than hiring an electrician to run more CAT-5.
You can also use both touches at the same time - even sync them together to play the same stuff. You can use the same mysqueezebox.com account on both Touch players.
