The Genre menu only lists Genres you actually have in your tags. It doesn't list "all known ones" - only ones you are actually using. There is NO definition of "an album" because real albums can have just one track... (even where the original was split onto 2 sides of vinyl..) What you need to do is to put all of your "singles" into one (or more)virtual albums by editing their tags.
