It's definitely not a folder size problem.

I think it's because you have a  mixture of 2 problems:
1) The Laptop (where SBS is running?) has to talk over the wi-fi
network to the NAS
2) The Touch has to talk over wi-fi to the SBS Laptop...

As a test, try wiring the laptop to the router and see if the problem
goes away.
