Background: I haven't had the Touch for long. I have two Classics, one Boom, and two Touches. I almost exclusively use the touch screen on the Touch. Mainly because it's way easier for Search, and most other things, IMO. I can't say I thoroughly like touch screens, but on the Touch it seems like the best way of interacting with it. The only thing I use the remote for is to turn it off if my hands are a bit dirty :) Actually, I wish there was an easier way to quickly turn it off from the touch UI. Right now, I am holding down the Back button to go Home, and then turning it off with the on/off button.
