I put an article on my website about changing/hiding buttons on the touch, so I dont see why you couldnt change an existing button and make it do something else, its only going to be calling a power off function.
You can test against Squeeze play rather than your touch, until you get the code right. Plus you will need to replace the code each time the touch updates its firmware as your changes will get overwritten. I'd like to expand the hack section on my site, so let me know how you get on.
