Are you running an external server or the builtin server (with an
attached USB drive or stick)?

What you describe is not normal behavior for the Touch, mine stays on
24/7 and never has this problem. 

One thing you can try is a factory reset and see if that makes a
difference. 

One thing I would try is to turn on remote access and SSH into the
Touch from another computer (PuTTY on a windows computer, ssh on a
mac). Then let it sit with the connection still going. If its
unresponsive see if the SSH connection is still good or not. If its
still up you can look at the log file (vi /var/log/message) and see if
there are any messages that give a clue as to what is happening. If
it's disconnected try connecting again. If that doesn't work it looks
like the whole thing has crashed. Debugging that is a little harder.
