Try doing it the other way around: go to the Touch and have it look for the new server. Connect the Touch to the desktop running LMS. If the server (and network) are set up correctly, if you go to My Music > Switch Libraries then the name/IP address of the laptop server should show up.
Also, strictly speaking, the Touch can never work "simultaneously" with two servers. It can connect to one, and only one, server at a time.
