Ok, with your encouragement, I tried a little harder and: SUCCESS! 
These are the exact steps I followed:

    
- Prepare a FAT32 formatted USB key with latest fab4.bin, fab4.version
  & fab4.version.sha in the root directory, downloaded today from
  http://update.slimdevices.com/update/firmware/7.8.0/
- With SBTouch unconnected to anything (i.e. no audio, no ethernet)
  and with broadband modem disconnected from router, power SBTouch on.
- Select language: English.
- Select North America.
- Select Ethernet.  At this point, you get an error screen showing up
  on the SBTouch reporting no connection.
- *ON THIS SCREEN:* press and hold the *visible* back arrow in the
  upper left corner.  This will take you to a menu with Return to setup
  & Settings entries.
- Select Settings.
- Select Advanced.
- Select Software Update.
- Select Update from removable media.
- Perform firmware update, SBTouch reboots and you'll be back at the
  start of setup at the language selection menu.
- Select English.
- Select North America.
- SBTouch will now scan for wireless networks and then present a menu
  of available networks.
- Plug in ethernet cable, select Ethernet from the menu.
- SBTouch connects to ethernet and diplays "Connecting to
  mysqueezebox.com" spiny.  At this point, *JUST WAIT* for the
  connection attempt to time out.
- After the time-out, the SBTouch presents you with a menu that
  includes Switch Library.
- Select Switch Library and select a LMS running on the local subnet. 
  Attach the RCA audio cable and play some music.
- At this point, you can power-cycle the SBTouch and it will come back
  and connect to the last LMS it was connected to.  You're all set up
  without having needed an internet connection to mysb.com!
