Out of curiosity, I did a small experiment. I changed the time on the Touch via SSH, confirmed it showed the changed (and incorrect) time on the screen and then I started listening to music off the Logitech Media Server. A few minutes later I checked the time again and it was set back to the correct time.
So, indeed, there's no need to manually implement NTP for synching the time.
