The Squeezebox Classic/SB3 is limited to 24/48 which would not seem to
be an issue for your sources.  If connected to a DAC, I wouldn't expect
to hear any difference between it and a Squeezebox Touch.  The Touch is
reported to have a better sounding analog output (internal DAC), but I
can't confirm as mine have always been connected to an external DAC. 
The SB3 does not have USB output, but does have optical and coax.  Of
course, no display of album art and no "touch" screen as the SB3 display
does not support this.  If you buy an SB3, be sure to get the remote and
power supply.

If you don't need a physical display, the DAC32 or Raspberry Pi is a
less expensive option and supports higher bitrates.  An RPi can be
equipped with a HiFiBerry add-on board to provide analog out on RCA,
S/PDIF out via optical or coax, or an amplifier to connect directly to
stereo speakers.
