Something like...

ssh [EMAIL PROTECTED] 'trac-admin /path/to/trac hotcopy somedir && 
tar -czf - somedir; rm -rf somedir' > trac-backup.tar.gz

?  You'll need to be sure you're backing up the repository too (that's not 
included in trac's hotcopy).
