Do you mean a wiki but not the trac one?

Trac has a wiki, you can give authorization to certain users to access it.

In that case the default wiki is useful.

If you want create a new wiki, isolated from trac, maybe you must consider to 
use another tool (you can use apache security tools, indeed, to give access to 
it).
