The upgrade will not add a custom field, you have to do that yourself. The upgrade _will_ add a new table to the database used to track links between tickets.
As to the original question, upgrades will not in general remove any data. One notable exception to this is moving from MasterTickets for 0.10 to the 0.11 version. This is not supported, as the 0.10 version was a flaming hack and I really hope no one was using it. --Noah
