I have created a custom ticket workflow with trac 0.11 that fits our
needs wonderfully except for one little issue...

Is it not possible to change the initial/default status of a new
ticket to something other than "new".  I get the feeling I am missing
something simple here, but many things I have tried have failed...
All new tickets keep getting a status of new and we would like
something different.

Alternatively, if its not possible to change that initial ticket
status name from "new", is it possible to make it auto progress to a
next state that I have defined?
