AdvancedTicketWorkflow BlackMagicTicketTweaks. haven't used them. we have decided not to hide/manipulate fields yet, letting our engineers use their noggins. that said, I can see the benefit, particularly if you let customers create/view tickets.
I think there is a PrivateTicketsPlugin as well.
