Of course you might get an unstable version, that's what trunk is for
compared to the /branches/0.x.y-stable ...
That being said we strive to keep the tests green and if we break
something we usually fix it pretty quickly, during the day or the next
days (check for example at http://buildbot.timhatch.com/trac/grid).
Trac.edgewall.org (t.e.o) also runs at the latest head of trunk when we
approach the release date of a new major version, as it's the case
currently with 0.12.
So the rule of thumb for running a Trac version from trunk should be:
- watch the Timeline and see if things have stabilized a bit or if
we're in the middle of a commit frenzy (in which case, wait a few days ;-) )
- check the corresponding milestone page (currently
http://trac.edgewall.org/milestone/0.12) and pay attention to the
prerequisites listed there; also use the specific TracUpgrade and
TracInstall pages listed there (i.e. with a 0.12/ prefix, the "default"
pages are usually for the currently released a.k.a. stable version).
There's of course no guarantee when installing software directly from
the repository. Even branches/0.x.y-stable can have issues at times,
that's why we have a week of freeze and intensive testing before the
releases.
Are there any guidelines on how to transform this download into an
usable egg?

Then the usual way:
python setup.py bdist_egg
If you want a localized version, be sure to compile the catalogs first
(see http://trac.edgewall.org/wiki/0.12/TracInstall#InstallingTrac).
Finally, don't hesitate to edit those wiki pages to point out the parts
that were not clear, or to fix the occasional typo as you see them ;-)
