It is not clear what exactly you mean by "several projects or branches"..
Is it several Trac environments, one for each project / branch? Or one Trac
that is divided into projects somehow?
Is it a Subversion repository? A single repository with project directories?
Or multiple repositories?

Anyway, take a look at http://trac.edgewall.org/wiki/TracPermissions,
and if it doesn't give you the info you need - come back and explain your
requirements :-)
