How is http://trac-hacks.org/wiki/TracJsGanttPlugin#Arguments not what you are looking for? I'm surprised that [[TracJSGanttChart(milestone=xy and priority=major)]] Works. I'd expect it to be: [[TracJSGanttChart(milestone=xy,priority=major)]] Not closed should be: [[TracJSGanttChart(priority=major,status!=closed)]] You can even do: [[TracJSGanttChart(status!=closed|almost_closed)]] To get all tickets in any state but those two.
