Does anyone know how to create multiple ticket formats in one environment? 
My goal is to have two (or more) separate ticket formats that one can pick 
from when generating a new ticket, with each ticket format having different 
fields. Someone I work with said his last job had this implemented, but was 
only ever involved as a user.

I know how to use the [ticket-custom] section in trac.ini to create a 
custom ticket, but is it possible to have two custom ticket formats?
