The bottom of each Trac Wiki page has a "Download in other formats: Plain 
Text" link. See for example:
https://trac.edgewall.org/wiki/TracWiki

I imagine you won't want to write the documentation in Trac's Wiki markup 
language since I doubt Sphinx will take it as input. Which markup language 
will you use? If RST, that is supported in Trac:
