DocBook is quite complex and hence writing your own comprehensive stylesheets would be a non-trivial task. Perhaps Simplified DocBook would be better suited? If you took things further and took a very small subset of the DocBook elements, writing the stylesheets and a wiki syntax converter would be trivial.
