SimpleTicket only hides entry fields. It doesn't touch the ticket view mechanism. The general usage model would be to give your customer TICKET_CREATE_SIMPLE privs, but not TICKET_VIEW. They can enter new tickets, but not see them. For something more detailed than that you will need to wait until the security and workflow sandboxes get merged after 0.10 is out (or do some semi-major hacking).
