That doesn't happen directly. Gnome-shell uses the "search provider" dbus interfaces, nautilus implements one such search provider for the shell, which does use Tracker as per code in upstream. Now, even though Ubuntu allows installing Tracker, they went through great lengths to avoid a mandatory dependency on it. As a result, all Tracker code in Nautilus has been patched away by Ubuntu, which made the search experience within nautilus/overview below par. Hope that clears things up!
