I'm not sure myself, but I believe that Jim Strupp's bundle with  
Uniform server [1] allows you to run from a USB stick. At various  
points I've tried using RubyScript2Exe to get a standalone  
installation, but failed. It generates a binary that runs, but I  
can't get it to read/write to a database within the package. It would  
be pretty ideal for people who didn't want to do all the  
configuration and installation, or wanted to use Tracks on the move  
without a server.

I've heard of it, but not actually used it. But as I said, you should  
be able to use Jim's package for running from USB.
