You should crop to avoid wasting bits encoding the boundary between the picture and the bars. The encoding of that boundary distorts the image near the boundary as well. The bars are of no consequence when viewing on the TV because they are well outside of the area that you can see due to overscan. By compensating for the overscan when you convert to your viewing format (whether you are viewing your xvid version or converting to dvd) you can see MORE than what you see on your dvd. You can see what you see in the theatre, which is at least 10% more than what you see when viewing a dvd on the TV.
