Yeah, but I'm not sure you can do it without editing the script or manually fashioning your own transcode command.

Nope. The only possible way to acceptably reduce the size of your video (while retaining the same resolution) is to use a more efficient codec, like choosing MPEG-4 over MPEG-2, or H.264 over MPEG-4. Unfortunately, since you want to output to a DVD, that's not an option. Of course, reducing your video's overall size by about 300 MB shouldn't reduce quality that much, so I think you're pretty safe with this one.
