Set up your initial profile for mail retrieval (i.e. put in the POP3
settings you've shown below).
Then once the profile is set up, go to the mailbox in Chatter and choose
"Edit Mailbox". The last tab in that dialog is "SMTP", which gives you
the opportunity to set up the settings that are specific to SMTP
authentication.
