I'll use Gmail as an example. Open up the account prefs/settings. Scroll down to "Default Folders". See the one that says "TRASH" in blue? Whatever folder that's set to (mine is set to "All Mail" so that I archive anything I swipe off the Pre) will receive everything that's swiped away. Default, I think, is Trash.
