Yes, althought Google's term for folder (or tag) is a label.  In Gmail
there's a pulldown to "Move to" a label, which is essentially the same thing
as labeling something and then archiving it.

As far as the filter, on the second step you need to check the "Skip the
Inbox (Archive it)" as well as "Apply the label:" and pick which label (ie
folder) you want it sent to.  Hope this helps.
