This is slightly OT, but I have a PGP question. (GPG to be precise) When I put my name at the end of emails I send, I have a habit of using a dash and then my name (-Josh). I have a plugin for my email client (Mail.app for Mac OS X) that automatically GPG signs mail that I send. The problem is, GPG puts another dash in front of my name (- -Josh). I know, it's a stupid problem to be concerned with, but I was wondering what (if anything) I could do to change GPG's behavior? (Rather than change my behavior :)

No, it will do that to any line starting with a - because that's how your plugin recognizes where the PGP message starts/stops. You could try, however, instead of using inline PGP, use PGP-Mime, which, I don't think will do that.
