I use YellowDog Linux, I have a 350MHz beige G3 and it works *very* well for me. You will need your original Mac OS CD to partition the hard drive, but the installation documentation at the YellowDog site is excellent. Everything just worked as expected. :) AND, the yum package manager is great.

YellowDog looks a *lot* like Red Hat, iirc, its RH based.
