I found this on the RedHat site, which seems to be a pretty detailed walk-through of the process... http://www.redhat.com/docs/manuals/enterprise/RHEL-3-Manual/sysadmin-guide/ch-kernel.html
However, on my RHES/CentOS box, it turned out to be a one-line operation: yum install kernel-smp (then reboot, of course)
yum rocks!
