Sure enough, there's a new version of GAIM now (1.3.1), and it appears
registration works properly. I don't know about adium, but if it
suffers from the same bug, it will likely take a bit before the fix
makes it into adium.

It just tries to auth, obviously fails, and just gives up. According
the RFC and JEP-0077, the jabber server is doing all of its duties,
GAIM just isn't trying to register. Adium, I imagine, suffers from
the same problem. I'll communicate with the jabberd maintainer to see
if he has thoughts about what's wrong, but GAIM's jabber support
leaves something to be desired. Try a non-broken client like Psi. It
works on a Mac too. Other decent clients are Tkabber, Gossip, and
maybe Kopete, but I don't have much experience with them to know if
they register properly.

I've been unable to register a new account; GAIM spits back a "401 not
authorized" response, and Adium just gives back a generic error
message.
What am I supposed to do to re-register an account?
