I have been converted to the Debian Way so i'd suggest Kubuntu.  KDE
will be more familiar to a windows user, and it's extra easy to set up
and manage.

don't use the kubuntu iso (it doesn't include the system administration tools, which most folks will need). instead start with ubuntu and 'apt-get install kubuntu-desktop'. the end result is a kubuntu system but with more tools.
